Tagliatelle is a classic Italian pasta in the form of a long, wide ribbon. Initially treated as an exclusive product, available to a select few, now it enjoys great popularity all over the world. Flat, rough and porous ribbons go well with heavy, thick, meat sauces, but they also taste good with creamy sauces (e.g. carbonara) or seafood. In the alla Bolognese version, they are a great showcase of the Emilia Romagna region, where both tagliatelle and Bolognese sauce come from.
