Whole Wheat Farfalle

This beautiful pasta comes from Lombardy and the Emilia Romagna region, and is made by pulling a rectangular piece of dough in the middle into the shape of a butterfly (Italian: “farfalla”) or a bow. Bows, thanks to their fancy shape, add charm to dishes in which they are found. Their undeniable advantage is also that they feel great in the company of larger ingredients, such as broccoli florets or pieces of chicken, making them ideal for preparing salads.
